2 C. flour
1/2 C. sugar
1 C. milk
3 T. cocoa
3 tsp. baking powder
3 T. cocoa
3 tsp. baking powder
1 tsp salt
1 1/4 C. flaked coconut, divided
1/3 C. vegetable oil
1/4 tsp. almond extract
1/4 C. sweetened condensed milk
In a bowl combine flour, sugar, cocoa, baking powder and salt.
Combine milk, egg and oil; mix well. Stir into dry ingredients justuntil moistened. Spoon 2 T. into 12 greased or paper lined muffincups.
Combine 1 C. coconut, condensed milk and extract; place 2 tsp. in thecenter of each cup (do not spread). Top with remaining batter;sprinkle with remaining coconut.
Bake at 400º for 20-22 minutes or till muffins tests done.
Cool for 5 minutes before removing from pan to a wire rack.
Makes 1 dozen.
